Instructions
Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray or a bit of melted butter.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until combined.
In another bowl, mix the Greek yogurt, milk, melted butter, egg, lemon zest, and lemon juice until smooth and well blended.
Gently fold the wet ingredients into the dry ingredients, making sure not to overmix. The batter should be slightly lumpy.
Carefully fold in the fresh blueberries, ensuring they're distributed evenly without breaking them apart.
Using a piping bag or a spoon, fill each donut cavity about 3/4 of the way full with the batter.
Bake in the preheated oven for about 12-15 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
Remove from the oven and let the donuts cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
Optional: Once cooled, dust the donuts with powdered sugar for a sweet finish.
Notes
Arrange the donuts on a decorative plate, adding a few fresh blueberries and lemon slices around for an extra pop of color!
