Instructions
In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced ginger, and garlic to create the teriyaki glaze.
Place the salmon fillets in a shallow dish and pour half of the teriyaki glaze over them. Let them marinate for at least 15 minutes.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Remove the salmon from the marinade and place it on the prepared baking sheet. Pour the remaining marinade over the top.
Bake the salmon for 12-15 minutes or until it flakes easily with a fork. Broil for an additional 2-3 minutes for a caramelized finish if desired.
While the salmon is baking, prepare the bowls: Scoop 1 cup of cooked jasmine rice into each bowl.
Arrange steamed broccoli, shredded carrots, and edamame around the rice.
Once the salmon is done, place a fillet on top of each rice bowl.
Drizzle additional teriyaki glaze over the salmon and vegetables if desired.
Garnish with chopped green onions and a sprinkle of sesame seeds.
Notes
For a caramelized finish, broil the salmon for an additional 2-3 minutes.
