Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the rolled oats, all-purpose flour, baking powder, baking soda, salt, and cinnamon. Set aside.
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
Add the honey, egg, and vanilla extract to the butter mixture. Mix until fully combined.
Gradually add the dry oat mixture to the wet ingredients, stirring until just combined.
Fold in the raisins or chocolate chips if using, ensuring they are evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden and the centers are set but still soft.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Serve the cookies on a decorative plate with a drizzle of honey on top or alongside a glass of milk for a classic touch.
