Instructions
In a large salad bowl, combine fresh baby spinach, sliced strawberries, cucumber, and red onion.
In a small bowl, mix the yogurt, honey, apple cider vinegar, poppy seeds, and Dijon mustard until well blended. Season with salt and pepper to taste.
Drizzle the poppy seed dressing over the salad and gently toss until the greens and fruits are well coated.
Sprinkle crumbled feta cheese and toasted nuts over the top for added flavor and texture.
Serve immediately, or chill in the refrigerator for up to 30 minutes to blend the flavors before serving.
Notes
Serve the salad in a large, shallow bowl and garnish with a few whole strawberries and edible flowers for a beautiful display.
