In a mixing bowl, combine the rolled oats, almond milk, Greek yogurt, softened cream cheese, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir until all ingredients are well blended.
Fold in the diced strawberries gently to distribute them throughout the mixture.
Divide the mixture evenly into 2 jars or airtight containers.
Sprinkle the crushed graham crackers on top of each jar.
Cover the jars with lids and refrigerate them overnight, or for at least 4 hours, allowing the oats to soak and absorb the liquid.
In the morning, give the oats a good stir before serving. If desired, add extra fresh strawberries and a drizzle of honey on top for added sweetness and presentation.

Serve in clear glass jars to showcase the beautiful layers, and garnish with fresh whole strawberries on top to enhance the visual appeal.
