Instructions
Preheat your oven to 400°F (200°C).
On a large baking sheet, arrange the halved tomatoes, quartered onion, and garlic cloves.
Drizzle the olive oil over the vegetables, then sprinkle with dried basil, oregano, sugar, salt, and pepper. Toss everything to ensure even coating.
Roast in the oven for 30-35 minutes or until the tomatoes are caramelized and soft.
Once roasted, transfer the vegetables to a large pot. Add the vegetable broth and bring to a simmer over medium heat.
Use an immersion blender to puree the mixture until smooth. If you prefer a chunkier texture, blend less.
Stir in the heavy cream (if using) and adjust the seasoning with salt and pepper to taste.
Let it cook on low for an additional 5-10 minutes.
Serve hot, garnished with fresh basil leaves for an aromatic finish.
