honey or maple syrup

mini chocolate chips

ground flaxseed

Instructions
In a mixing bowl, combine the rolled oats, ground flaxseed, and salt. Stir to mix well.
In another bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and combined.
Pour the peanut butter mixture into the dry ingredients. Stir until everything is evenly coated and combined.
Add in the mini chocolate chips and mix again to distribute them throughout the mixture.
Once the mixture is fully combined, cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes to firm up.
After chilling, use your hands to form small bite-sized balls (about 1 inch in diameter) from the mixture.
If desired, roll the bites in crushed nuts or shredded coconut for an extra coating.
Place the energy bites in an airtight container and store them in the refrigerator for up to one week.
