1lbboneless, skinless chicken breast, cut into small bite-sized cubes

1red bell pepperdiced
0.5cupfresh cilantro, chopped

Instructions
In a mixing bowl, combine the soy sauce, fish sauce, brown sugar, lime juice, minced garlic, and grated ginger. Whisk until the sugar is fully dissolved.
Add the cubed chicken to the bowl and toss until the chicken pieces are well coated in the marinade. Let it marinate for about 10 minutes.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken, making sure to include all the marinade. Spread the chicken evenly in the pan.
Sauté the chicken for about 6-8 minutes or until golden brown and cooked through, stirring occasionally. Add salt and pepper to taste.
Stir in the diced red bell pepper and cook for an additional 2-3 minutes until the pepper is slightly softened but retains some crunch.
Remove from heat and sprinkle chopped cilantro over the chicken bites. Toss gently to combine.
Serve warm, garnished with sliced red chili or crushed peanuts if desired.
