Instructions
Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, chopped pecans, almond slices, cinnamon, and salt.
In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.
Pour the liquid mixture over the dry ingredients and stir until every oat and nut is coated evenly.
Using your hands or a spatula, pack the mixture tightly into clusters on the prepared baking sheet.
Bake for about 20-25 minutes, or until the granola is golden brown. Halfway through, stir gently to ensure even baking but retain the clusters.
Remove from the oven and allow to cool completely on the baking sheet. Once cooled, gently break into large clusters.
Mix in the dried cranberries or raisins, and store the granola clusters in an airtight container.
