Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
Stir in the minced garlic and cook for another minute until fragrant.
Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, or until fully cooked through.
Season the chicken with cumin, chili powder, paprika, salt, and pepper. Stir well to combine and allow the spices to blend into the meat for about 2 minutes.
While the chicken is cooking, wrap the tortillas in foil and warm them in the oven at 350°F (175°C) for about 10 minutes, or microwave them for about 30 seconds until warm.
To assemble the tacos, place a generous scoop of the ground chicken mixture in the center of each tortilla.
Top with shredded lettuce, diced tomatoes, and cheese. Add a dollop of sour cream and a spoonful of salsa on top.
Garnish with fresh cilantro leaves if desired.
