Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the halved baby potatoes, minced garlic, olive oil, dried oregano, smoked paprika, salt, and pepper.
Toss the potatoes until they are evenly coated with the olive oil and seasoning mixture.
Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25 minutes.
After 25 minutes, remove the baking sheet and sprinkle the grated Parmesan cheese over the potatoes.
Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the potatoes are golden brown and crispy.
Once done, remove from the oven and garnish with freshly chopped parsley before serving.
Notes
Serve the roasted potatoes on a platter, garnished with additional parsley and a sprinkle of Parmesan for an appetizing look.
