Spread the cauliflower mixture onto a baking sheet in a single layer to allow for even roasting.
Roast the cauliflower in the preheated oven for about 25-30 minutes, or until it is golden brown and tender, stirring halfway through.
In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the cauliflower and return it to the oven to melt and crisp up.
Once done, remove from the oven and drizzle with lemon juice, then sprinkle with chopped parsley for added freshness.
