Instructions
Begin by placing the eggs in a pot and covering them with water. Bring to a boil over medium-high heat.
Once boiling, cover the pot, turn off the heat, and let the eggs sit for 12 minutes.
After 12 minutes, transfer the eggs to an ice bath to cool for about 5 minutes. This makes peeling easier.
Carefully peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
Mash the yolks with a fork and add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper. Mix until creamy and smooth.
Spoon or pipe the yolk mixture back into the egg whites.
Sprinkle with additional smoked paprika and garnish with chopped chives or green onions for a fresh touch.
Notes
For a spicier kick, add a dash of hot sauce to the yolk mixture.
