Instructions
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined.
Add the egg and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the chocolate chips and nuts (if using) to evenly distribute throughout the dough.
Divide the cookie dough into two equal portions and shape each portion into a log about 2 inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour or until firm.
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Once the dough is firm, remove it from the refrigerator and slice the logs into 1/4-inch thick rounds. Place the cookie slices on the prepared baking sheet, leaving space between each to allow for spreading.
If desired, sprinkle the tops with colored sugar or sprinkles for added flair.
Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
