In a small bowl, mix the cooked ground beef with the taco seasoning until well combined.
Place the large flour tortilla on a baking sheet lined with parchment paper. Brush one side of the tortilla with olive oil.
Spread the refried beans evenly over the un-oiled side of the tortilla.
Layer the seasoned ground beef over the refried beans.
Sprinkle the shredded Mexican cheese blend evenly over the beef followed by diced tomatoes, black olives, green onions, and jalapeño slices if desired.
Place the baking sheet in the preheated oven and bake for about 15-20 minutes or until the cheese is melted and bubbly and the edges of the tortilla are crispy.
Remove from the oven, let cool for a minute, then slice into wedges.
Garnish with fresh cilantro and serve with salsa and sour cream on the side.
