Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese, cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Mix well until the ingredients form a thick batter-like consistency.
Using a tablespoon, scoop out small, flat circles of the mixture onto the prepared baking sheet, leaving space between each for spreading.
Drizzle a little olive oil over the chips before placing them in the oven to help with crisping.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy. Flip the chips halfway through to ensure even cooking.
Remove from the oven and let them cool for a few minutes before transferring to a serving platter.
