Start by washing and peeling the sweet potatoes. Slice them thinly, ideally around 1/8 inch thick, using a mandoline or sharp knife for consistent thickness.
Soak the sliced sweet potatoes in a bowl of cold water for about 30 minutes. This helps remove excess starch and makes the chips crispier.
After soaking, drain the slices and pat them dry thoroughly with a kitchen towel. Remove as much moisture as possible.
In a large bowl, toss the sweet potato slices with olive oil, ensuring they are evenly coated.
Add the garlic powder, paprika, cumin, salt, and pepper. Mix well to coat all the slices evenly with the seasonings.
Preheat the air fryer to 350°F (175°C). Once preheated, arrange the sweet potato slices in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking.
Air fry the sweet potato chips for about 12 to 15 minutes, shaking the basket halfway through to promote even cooking. Keep an eye on them towards the end to ensure they reach your desired crispiness.
Once done, remove the chips and let them cool slightly. They will continue to crisp up as they cool.
