Instructions
In a blender, combine the diced mangoes, coconut milk, Greek yogurt, honey (or maple syrup), lime juice, and a pinch of salt. Blend until smooth and creamy.
Taste the mixture and adjust sweetness if necessary by adding more honey or syrup.
Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
Insert the popsicle sticks and place the molds in the freezer.
Freeze for at least 4-6 hours or until solid.
To remove the popsicles, run warm water over the outside of the molds for a few seconds until they loosen. Gently pull them out.
If desired, sprinkle with chopped mint or shredded coconut for added texture and flavor before serving.
Notes
Adjust sweetness to taste and add garnish if desired.
