Instructions
Cut the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
Add the fresh cilantro leaves, garlic clove, and lime juice into the blender.
Spoon in the Greek yogurt and drizzle in the olive oil for creaminess.
Add the honey or maple syrup to balance the flavors.
Blend the mixture on high until smooth and creamy.
If the dressing is too thick, add water, one tablespoon at a time, until you reach the desired consistency.
Season with salt and pepper to taste, blending again to combine.
Transfer the dressing into a container and refrigerate for at least 30 minutes to allow the flavors to meld.
