Instructions
Preheat your oven to 375°F (190°C).
Lay one sheet of phyllo dough on a clean surface. Brush lightly with melted butter or spray with cooking spray; layer another sheet on top. Repeat this process until you have stacked four sheets.
Cut the stacked phyllo dough into a grid of 3x4 squares to create 12 equal pieces.
Gently press each piece into a muffin tin, forming cups. Make sure the edges of the phyllo dough are fluted and not too even to add texture.
Bake the phyllo cups in the preheated oven for about 8-10 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly.
In a small mixing bowl, combine the brie cubes, cranberry sauce, thyme, honey, salt, and pepper, stirring until well mixed.
Spoon the cranberry-brie filling into each of the baked phyllo cups, filling them generously.
Return the filled cups to the oven and bake for an additional 5-7 minutes, or until the brie is melted and bubbly.
After baking, let the cups cool for a couple of minutes before carefully removing them from the muffin tin.
