Instructions
In a mixing bowl, combine coconut milk, lime zest, lime juice, honey, minced garlic, grated ginger, and soy sauce to create a marinade.
Season the chicken breasts with salt and pepper on both sides before placing them in the marinade. Make sure they are completely coated.
Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (reserve the marinade) and add to the skillet.
Cook the chicken for about 5-7 minutes on each side, or until golden brown and fully cooked (internal temperature should reach 165°F).
Once cooked, pour the reserved marinade into the skillet and bring to a simmer. Cook for an additional 3-4 minutes to thicken slightly.
Remove from heat and let the chicken rest for a few minutes before slicing.
Serve the sliced chicken drizzled with the thickened sauce and garnish with fresh cilantro.
Notes
For best flavor, marinate the chicken for up to 2 hours.
