In a mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Once the yeast mixture is ready, add it to the flour mixture and stir until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Once the dough has risen, punch it down and divide it into small pieces, about 1 inch in size.
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop the pretzel bites into the boiling water, about 8-10 at a time, and boil for 30 seconds. Remove them with a slotted spoon and place them on the prepared baking sheet.
Brush the tops of the boiled pretzel bites with the beaten egg.
Bake for 12-14 minutes, or until golden brown.
While the pretzel bites are baking, mix the granulated sugar and cinnamon together in a bowl.
Once the pretzel bites are out of the oven, toss them in the melted butter, then coat them in the cinnamon-sugar mixture until well covered.
