Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
In a large bowl, beat the softened butter and brown sugar together until fluffy, about 2-3 minutes.
Mix in the egg and vanilla extract until well combined.
Gradually add the dry ingredient mixture into the wet ingredients, mixing until a dough forms.
On a clean surface, roll the dough into a log about 1.5 inches in diameter. Wrap in plastic wrap and chill for at least 30 minutes.
Once chilled, remove the dough from the wrap and slice into 1/2 inch thick rounds. Roll each slice in granulated sugar to coat.
Place the cookie slices on the prepared baking sheet, leaving space between each. Bake for 10-12 minutes, or until the edges are lightly golden.
While the cookies cool, mix the powdered sugar and milk in a small bowl until smooth. Adjust the consistency by adding more milk if necessary.
Drizzle the glaze over the cooled cookies using a spoon or whisk.
Notes
Arrange the cookies on a decorative platter, and consider adding a sprinkle of cinnamon or a small mint leaf for a touch of color.
