Instructions
In a large mixing bowl, combine the drained chickpeas, diced avocado, halved cherry tomatoes, diced cucumber, and chopped red onion.
Gently fold in the crumbled feta cheese and chopped parsley, being careful not to mash the avocado.
In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper to create a dressing.
Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
Taste and adjust seasoning with extra salt, pepper, or lemon juice as desired.
Allow the salad to sit for 5-10 minutes to let the flavors meld before serving.
