cooked ham, diced

shredded sharp cheddar cheese

cream cheese, softened

Dijon mustard

fresh chives, chopped (optional)

Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut it into 4 equal squares.
In a bowl, mix the diced ham, cheddar cheese, cream cheese, Dijon mustard, and chives (if using). Season with salt and pepper to taste.
Place a generous spoonful of the ham and cheese mixture in the center of each puff pastry square.
Fold the pastry over to create a triangle shape. Press the edges together firmly, then use a fork to crimp the edges for a decorative seal.
Brush the tops of each pocket with the beaten egg to give them a golden finish when baking.
Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and allow to cool slightly before serving.
Notes
Chives are optional but add a nice flavor.
