Instructions
Preheat your oven to 375°F (190°C).
Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
Heat a skillet over medium heat and cook the chicken breasts for about 5-7 minutes on each side until golden brown and fully cooked.
Remove the chicken from the skillet and allow it to rest for a few minutes before slicing it into thin strips.
In a bowl, mix the mashed avocado with salt and pepper to taste.
On a baking sheet, arrange the slices of whole grain bread. Spread a layer of mashed avocado on each slice.
Divide the sliced chicken evenly among the bread slices and then top each with a slice of tomato.
Generously sprinkle shredded mozzarella cheese over the top of each slice.
Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
Remove from the oven and garnish with fresh cilantro or parsley before serving.
Notes
Feel free to add other toppings like jalapeños for extra spice.
