Instructions
Preheat your oven to 400°F (200°C).
In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the chopped spinach to the skillet and cook until wilted, around 3-4 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cream cheese, feta cheese, and cooked spinach. Mix until well combined, and season with salt and pepper to taste.
Take the salmon fillets and cut a pocket into each one by slicing them horizontally, being careful not to cut through.
Stuff each salmon fillet with the spinach and cheese mixture, pressing gently to ensure it holds.
Rub the outside of each stuffed salmon fillet with the blackening seasoning, ensuring an even coating.
In a skillet over high heat, sear the salmon fillets for 2-3 minutes on each side until the outside is nicely charred.
Transfer the seared salmon to a baking dish and bake in the preheated oven for an additional 7-10 minutes or until cooked through.
Serve hot, garnished with lemon wedges for an extra burst of flavor.
