Instructions
In a large mixing bowl, combine the mashed avocado and chickpeas. Using a fork, roughly mash them together, leaving some chickpeas whole for texture.
Add the chopped red onion and diced celery to the bowl.
In a separate small bowl, whisk together the lemon juice, mayonnaise (or Greek yogurt), Dijon mustard, garlic powder, salt, and pepper until well combined.
Pour the dressing over the avocado and chickpea mixture and gently stir until everything is evenly coated. Adjust salt and pepper to taste.
Toast the slices of bread if desired for added crunch.
To assemble the sandwich, layer leafy greens on two slices of bread. Spoon a generous amount of the avocado chickpea mixture on top, then finish with the remaining slices of bread.
Cut the sandwiches in half and serve immediately.
Notes
For a lighter option, substitute mayonnaise with Greek yogurt.
